7-up Cake

This is another recipe from The Hubbs' Grannie.  :0)  She makes it in several different flavors, and when fruit like strawberries or blackberries start to come into season, she slices up this cake and tops it with fruit and whipped cream.  It is divine! 

Ingredients:
3 sticks of butter
3 cups of sugar
3 cups plus 3 heaping tablespoons of flour
5 eggs
3/4 cup of 7-up (or any lemon lime flavored soda)
1 tablespoon lemon extract--or orange, or almond...take your pick!
1 tablespoon vanilla

Directions:
Preheat oven to 325 (or 315 if you are using a dark or nonstick pan)
Cream butter and sugar together
Add in eggs, one at a time, beating well in between each egg
Add in all remaining ingredients, alternating the flour and the 7-up
Pour batter into a greased and floured bunt pan
Bake 1 hour and 15 minutes
