Mini Ham and Egg Pies

This recipe is easy peasy, and it allows you so much freedom to experiment with ingredients.  I have made these with ham, turkey, and even ground sausage.  It is fast and easy to make, and even freezes well.  The Hubbs has taken these to potlucks on more than one occasion with rave reviews! 

Ingredients:
12 slices of ham or turkey
7 eggs
1/4 cup of milk
1/4 to 1/2 teaspoon salt
2 medium sized tomatoes--diced
diced onion or chives to taste
1/2 cup shredded cheddar cheese

Directions:
Preheat oven to 350
Spray a 12 cup muffin tin with cooking spray. 
In a bowl, combine the eggs, salt, and milk.  Beat until well combined.
Place a slice of ham (or turkey) into each muffin tin cup.  You want to use the sliced meat as a mock muffin tin liner, so let the edges peak out above the top of each cup.
Put a little bit of tomato and onion into each cup--try to divide them equally. 
Pour the egg mixture into each cup, but do not fill the cups all the way.  Leave about 1/4 inch unfilled.  Do not worry if some of the egg mixture goes under the sliced meat, it will be just fine! 
Top with shredded cheddar cheese.
Bake for 18 minutes, or until set.
Let cool five minutes or so, and then enjoy!  .

You can pretty much use any fillings that you would like to.  Things like diced bell peppers, salsa, mushrooms, and olives would all work great.  If you ever want to use ground sausage in place of the sliced lunch meat, just put the sausage into the muffin tin cups first followed by your other fillings.
